I am a the ultimate cookie fiend.
I’ve never met a well-baked cookie I didn’t like.
If there is one thing my knees go weak for it’s a perfectly baked, chewy, warm cookie. I’ll go for any variety really, but if I had to pick one I’d definitely marry the chocolate chip cookie.
An awesome cookie is definitely something I’ve somewhat struggled to find and perfect since avoiding gluten and refined sugars.
I was so so thrilled with how these ones turned out! They might not be exactly like the ones I used to bake, but it it’s still absolutely delicious and definitely hit the spot. Cravings, be gone! I raise you one delicious, warm, fresh-out-of-the oven cookie!
The outsides were deliciously browned while the inside remained soft and almost cake-y, so that every bite is incredible and the whole cookie is devoured in a heartbeat!
The pecans also give it such an amazing nutty crunch, while the cacao nibs give it that great cacao bitterness, so that it’s perfect as an afternoon snack that won’t spike our blood sugar levels.
Of course if you want something sweeter than definitely go for chocolate chips, but I did love it with the nibs!
One of my biggest pet-peeves when baking something that is gluten free is that it can sometimes come out crumbly. That is basically the opposite of what you want a cookie to be! If I bake a cookie I want a cookie, not a biscuit!
Well luckily these babies behaved perfectly and held together super well! Hooray!
Another plus of baking cookies at home? The smells. Oh the smells!
I think freshly baked cookies should be the new alarm clock. Nothing would make me jump out of bed as much as the smell of a batch of freshly baked cookies.
